One of the things I miss most about Thailand are the exquisite
dinners that I was eating every day. I very rarely ate at home
because even the most delectable dishes were so affordable.
While I was still working I went out at about 7 or 8 p.m., but
once I retired, I fell into a pattern of eating my main meal at
4 p.m., when the traffic was light, and the restaurants were
quiet. All my favorite meals were within a 10 minute taxi ride,
and the fare rarely exceeded 80 baht ($2.35 U.S. at the current
rate.) In this special gallery I will share with you photos and
comments of my favorite meals in Thailand, how much they cost,
and what restaurants you can find them in. By the time I am
finished, you will know what savory dishes are waiting for you,
and I think many of you will want to book a flight to Thailand
for your next vacation! Only one of the dinners I am about to
show you is over $15, and that is an all you can eat Mexican
meal that just recently rose in price, and still comes in at
only $15.58.
In stark contrast, here in the U.S. (Utah) I am sorely
disappointed with what I have found. For example, when I walk
into a Mexican fast food restaurant, just one enchalada usually
costs from $13 to $17, so I rarely eat out, and most of the time
when I do, I have been disappointed. The food is usually not as
good as it appears in the photos and I usually walk away feeling
like the money I spent just wasn't worth it. I frequently leave
that restaurant with no intention of ever repeating the mistake
I just made.
It seems that here in the U.S. the most efficient way of
satiating my hunger for really great food is to learn to cook it
myself at home. For the past six weeks, through trial and error,
I have been trying to imitate the dish in the photo above. What
I found was that using pure cheese did not work very well, as
any good cheese tends to stick together and string out as you
attempt to seperate it from the ever so delicate salmon. The
solution is to create a cheese sauce, blending the cheese into a
mixture of butter and milk.
